Just as the weather can’t decide whether to be hot or cold, I often can’t decide what’s for dinner. With a prospect of a hard frost, I decided the following recipe for sausage and white beans would be appropriate; hearty, filling and easy.
1-1/2 pounds lightly spiced sausage cut into 2-inch pieces, pricked with fork
2 Tablespoons olive oil
1 cup each chopped carrots and celery
2 garlic cloves, minced
1 14-ounce can tomatoes, drained and chopped
