In cooking, as in life, small things can make a big difference. One of my favorite simple salads is spinach with blue cheese, apple, red onion and pecans. Giving any onions a short soak in ice water will remove some of the harsh bite. Toasting nuts brings out their flavor. I use a dry skillet to toast them, some prefer the oven. You can substitute a pear for the apple. And baby spinach works best.
1/3 cup pecan halves, toasted
½ small red onion, thinly sliced into rounds
