Sometimes I forget about the most basic and simple recipes, my tried-and-true favorites. The following simple Dijon mustard vinaigrette is perfect for beginning cooks because it requires no chopping and no juicing. It’s a simple mix of red wine vinegar, mustard, salt, sugar, and olive oil. It’s also very child friendly since it doesn’t have an acidic bite, the sugar softens it.  
1 Tablespoon Dijon mustard
2 Tablespoons red wine vinegar
½ teaspoon kosher salt
1 teaspoon sugar
freshly ground pepper to taste
½ cup extra virgin olive oil
Whisk the mustard, vinegar, salt, sugar and pepper together; then whisking constantly, stream in the olive oil until emulsified.
Transfer to a storage vessel, store in the fridge. It lasts a long time, bring to room temp before serving
