Ozark Foodie


Tomato Rarebit is a simple old fashioned one-pan supper dish.

2 medium tomatoes, finely chopped
¼ teaspoon baking soda
2 tablespoons butter
2 tablespoons flour
1 cup milk, heated
1-1/2 cups grated cheddar cheese
2 eggs, slightly beaten
1 teaspoon dry mustard
¼ teaspoon cayenne pepper (more if desired)
Salt and pepper to taste
8 slices toast

Mix the chopped tomatoes and baking soda, set aside. Melt butter in saucepan, stir in flour, cook stirring constantly for about 3 minutes. Slowly pour in the heated milk and whisk until the mixture is smooth and thick.

Add the tomatoes, cheese, eggs, mustard, salt, pepper and cayenne pepper. Cook over very low heat, whisk until the cheese melts and the mixture is smooth.

Serve hot over the toast.
