I love hot dogs; grilled, steamed, beanie weenies, etc. One of my favorite sandwiches is the Chili Cheese Dog Grilled Cheese. Certainly not a top hit on the esoteric foodie list, but when my stepdaughters were young and always hungry it was one of their favorites too. Many versions abound, but this is how we did it.

For one sandwich:
2 tablespoons butter, cut into three even pieces
1 hot dog cut into 4 thin slices lengthwise
2 slices hardy white bread, such as Pepperidge Farm
2 slices American cheese
½ cup of your favorite chili

Melt one third butter in a large nonstick skillet. Add hot dog slices, cook, turning occasionally until browned on all sides. Transfer to plate, add both bread slices and cook until pale golden brown on bottom side, about 2 minutes. Transfer to cutting board, toasted side up, place cheese slices on top of each slice. Add hot dogs and chili to one side, then close sandwich, with both toasted slides facing inwards.

Melt one more piece of butter, and over medium low heat add sandwich, swirling occasionally until deep golden brown. Remove sandwich, add remaining butter, return to skillet cooked side up and cook until deep golden brown and cheese is thoroughly melted.
