Nearing the end of the fresh tomato season, I often make the following. More of an assembly than a recipe, you can quickly and deliciously use up a plethora of tomatoes.
Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Slice tomatoes about ½ inch thick and place on baking sheet, lightly salt and pepper each slice.  Top each slice with lots of freshly shredded parmesan and mozzarella cheeses. Drizzle olive oil over each slice, bake for 4 minutes, and run under a broiler to brown cheese.
This is a great side dish for almost anything, you can change up the cheeses, just don’t over bake the tomatoes or they will turn to mush. If you have some fresh basil, sprinkle on top.
